Ingredients:
- 1 lb soybeans
- 1/4 cup vinegar or apple cider vinegar
- Tempe starter culture
- Water
Instructions:
Rinse the soybeans and soak them in water for about 10 hours or overnight.
Drain the soybeans and remove the skin by rubbing them between your hands. Rinse the soybeans again and drain well.
Steam the soybeans for 45 minutes to an hour until they become soft.
Remove the soybeans from the steamer and let them cool until they are still warm but not hot to the touch.
In a large mixing bowl, mix together the warm soybeans, vinegar, and tempe starter culture. Make sure to mix well so that the soybeans are evenly coated.
Divide the mixture into 2-3 parts and place them into plastic bags. Make small holes in the bags to allow air to circulate.
Place the bags in a warm place, ideally between 85-90°F, for 24-48 hours until the beans are fully covered in white mold.
Once the tempe is fully formed, remove it from the plastic bags and cut it into pieces.
Tempe can be cooked in a variety of ways - fried, boiled, sautéed, or baked. One popular recipe is to fry the tempe in oil until it turns golden brown and crispy.
