Indonesia is a country rich in culinary traditions. Each region has its own specialty dish, and one of the most famous dishes from Semarang city in Central Java is Lumpia Semarang. Ingredients:

  • 20 pieces of lumpia skin

  • 200 grams of bamboo shoots, sliced thinly

  • 1/2 teaspoon of salt

For the Sauce:

  • 150 grams of palm sugar

  • 200 ml of water

  • 100 grams of peanuts, roasted and ground

  • 3 red chilies, chopped

  • 2 cloves of garlic, minced

  • 1 tablespoon of tamarind paste

  • Salt to taste

Instructions:

  1. First, prepare the filling. Heat a little bit of oil in a pan and sauté the garlic until fragrant.

  2. Add the bamboo shoots and cook until they are soft.

  3. Add the shredded chicken and chopped shrimp to the pan and stir-fry for a few minutes.

  4. Season the filling with salt and pepper, then add the beaten eggs and cook until the eggs are set.

  5. Remove the filling from the heat and let it cool down.

  6. Take one lumpia skin and place 2-3 tablespoons of filling in the center of the skin.

  7. Fold the bottom of the skin over the filling, then fold the sides over the filling.

  8. Roll the lumpia until it is completely wrapped, then seal the end with a little bit of water.

  9. Repeat the process until all the filling and lumpia skin is used up.

  10. Heat the oil in a pan over medium heat.

  11. Fry the lumpia until they are golden brown and crispy.

  12. Remove the lumpia from the pan and let them drain on a paper towel.

  13. To make the sauce, dissolve the palm sugar in the water in a saucepan over medium heat.

  14. Add the ground peanuts, chopped chilies, minced garlic, tamarind paste, and salt to the saucepan.

  15. Cook the sauce until it thickens and the sugar is completely dissolved.

  16. Remove the sauce from the heat and let it cool down.

  17. Serve the Lumpia Semarang with the sweet and sour peanut sauce.
