Halal Com Tam Vietnam Recipe and Guide:

Ingredients:

  • 2 cups of broken rice

  • 1 pound boneless chicken thighs or beef strips

  • 4 cloves of garlic, minced

  • 1 stalk of lemongrass, minced

  • 2 tablespoons sugar

  • 2 tablespoons fish sauce (look for halal-certified fish sauce or use soy sauce instead)

  • 1 tablespoon vegetable oil

  • 4 eggs

  • 1 tablespoon cornstarch

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 cucumber, sliced

  • 1/2 carrot, julienned

  • 1/2 daikon radish, julienned

  • 1/4 cup rice vinegar

  • 2 tablespoons sugar

  • 1/2 teaspoon salt

  • 1/4 cup soy sauce

  • 1/4 cup water

  • 2 tablespoons sugar

  • 1 tablespoon lime juice

  • 1 chili pepper, sliced

Instructions:

  1. Rinse the broken rice in cold water until the water runs clear. Drain the rice and add 2 cups of water. Cook the rice in a rice cooker or on the stovetop until tender.

  2. Cut the chicken or beef into thin slices and mix with garlic, lemongrass, sugar, fish sauce (or soy sauce), and vegetable oil. Marinate the meat for at least 30 minutes or up to 2 hours.

  3. In a bowl, whisk together the eggs, cornstarch, salt, and black pepper. Heat a non-stick pan over medium-high heat and add a bit of vegetable oil. Pour the egg mixture into the pan and cook until set. Flip the egg over and cook for another minute. Remove from heat and cut into thin strips.

  4. To make the pickled vegetables, mix the cucumber, carrot, and daikon radish in a bowl. In a separate bowl, mix rice vinegar, sugar, and salt until sugar is dissolved. Pour the vinegar mixture over the vegetables and let it sit for at least 15 minutes.

  5. To make the fish sauce, mix soy sauce, water, sugar, lime juice, and chili pepper in a small bowl.

  6. Grill the marinated chicken or beef over medium-high heat until cooked through.

  7. To serve, divide the rice into four bowls. Top each bowl with grilled meat, pickled vegetables, egg strips, and a drizzle of fish sauce.
