Kuy Teav Cambodian with halal ingredients:
Ingredients:
1 lb halal beef or chicken, sliced thinly
1 lb fresh rice noodles
8 cups water
1 tablespoon oil
4 cloves garlic, minced
1 teaspoon ginger, minced
1 cinnamon stick
2 star anise
4 cloves
1 tablespoon fish sauce
1 tablespoon sugar
Salt and pepper to taste
Bean sprouts
Green onions, chopped
Cilantro leaves
Lime wedges
Hoisin sauce
Instructions:
In a large pot, heat the oil over medium-high heat. Add the garlic and ginger and sauté until fragrant.
Add the beef or chicken and cook until browned.
Add water, cinnamon stick, star anise, cloves, fish sauce, sugar, salt, and pepper. Bring to a boil and then reduce heat to a simmer. Let simmer for 30 minutes.
While the soup is simmering, prepare the rice noodles according to the package instructions.
Once the soup has simmered for 30 minutes, remove the cinnamon stick, star anise, and cloves.
To serve, place a portion of rice noodles in a bowl, top with the beef or chicken and broth, and garnish with bean sprouts, green onions, cilantro, and a lime wedge.
Serve with hoisin sauce on the side.
