Instructions:
To make the pickled carrots and daikon, mix together the rice vinegar, water, sugar, and salt in a small bowl until the sugar and salt are dissolved. Add the shredded carrots and daikon to the mixture and let sit for at least 30 minutes.
Preheat your oven to 180°C. Place the baguette halves on a baking sheet and bake for 5-7 minutes, or until the bread is lightly toasted.
Mix the mayonnaise and chili sauce together in a small bowl.
To assemble the sandwich, spread the mayonnaise mixture on the inside of each baguette half. Add the grilled or roasted beef or chicken, pickled carrots and daikon, sliced cucumbers, and cilantro leaves.
Serve the Banh Mi immediately.
