Bulgogi is a popular Korean dish that features thinly sliced marinated beef cooked to perfection. The name "bulgogi" translates to "fire meat," indicating the traditional method of grilling the meat over an open flame. However, it can also be cooked on a stovetop or in a skillet. Here is a recipe for bulgogi:

Ingredients:

- 500 grams thinly sliced beef (preferably sirloin or ribeye)

- 1/2 cup soy sauce

- 3 tablespoons brown sugar

- 2 tablespoons sesame oil

- 2 tablespoons minced garlic

- 1 tablespoon grated ginger

- 2 tablespoons chopped green onions

- 1 tablespoon sesame seeds (optional)

- 1 tablespoon vegetable oil (for cooking)

- Freshly ground black pepper (to taste)

- Optional: sliced onions, carrots, mushrooms, or other vegetables for added flavor and texture

Instructions:

1. In a bowl, mix together the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, chopped green onions, sesame seeds, and black pepper. Stir until the sugar is dissolved and the marinade is well combined.

2. Add the thinly sliced beef to the marinade, making sure each slice is coated evenly. Cover the bowl and let the beef marinate for at least 30 minutes, or refrigerate it for up to 24 hours for more flavor.

3. Heat a tablespoon of vegetable oil in a large skillet or grill pan over medium-high heat. Once the pan is hot, add the marinated beef slices, reserving any excess marinade for later use. Cook the beef in batches to avoid overcrowding the pan, which can result in steaming instead of searing.

4. Cook the beef slices for 2-3 minutes on each side until they are browned and slightly caramelized. If desired, you can also add sliced onions, carrots, mushrooms, or other vegetables to the pan to cook alongside the beef.

5. If there is any leftover marinade, add it to the pan and cook for an additional 1-2 minutes until the sauce thickens slightly and coats the beef and vegetables.

6. Once cooked, transfer the bulgogi to a serving plate and garnish with additional chopped green onions and sesame seeds, if desired.

7. Bulgogi is traditionally served with steamed rice and accompanied by a variety of side dishes, such as kimchi and pickled vegetables. You can also wrap the beef in lettuce leaves and enjoy it as a wrap.

Note: Bulgogi can also be cooked on a grill or barbecue for an authentic smoky flavor. Adjust the cooking time accordingly, ensuring that the beef is cooked through but still tender.

Enjoy your homemade bulgogi, and savor the delicious flavors of this classic Korean dish!
