Adobo is a popular dish in the Philippines that is often considered the country's national dish. It is a stew made with meat (usually chicken or pork), vinegar, soy sauce, garlic, and other spices.

The dish has a long history in the Philippines, dating back to the pre-colonial era when vinegar was used as a preservative for meat. The Spanish later introduced soy sauce, which was added to the dish to create the unique flavor that adobo is known for today.

Adobo is a versatile dish that can be prepared in many ways. Some people prefer to use chicken or pork, while others use a combination of both. Some variations also include vegetables such as potatoes or green beans.


Halal Recipes (No Pork) or you can use pork if you are non Muslim

Ingredients:


  • 2 lbs. chicken (cut into bite-sized pieces)
  • 1 cup white vinegar
  • 1 cup soy sauce (make sure it's halal-certified)
  • 1 head of garlic, peeled and minced
  • 1 tsp. black peppercorns
  • 3-4 bay leaves
  • 2 tbsp. vegetable oil
  • 1 cup water
  • Salt to taste


Instructions:


  • In a large bowl, combine the chicken, vinegar, soy sauce, garlic, black peppercorns, and bay leaves. Mix well and marinate for at least 30 minutes, or overnight in the refrigerator for best results.


  • Heat the vegetable oil in a large pan over medium-high heat. Once the oil is hot, add the marinated chicken and cook until browned on all sides, stirring occasionally.


  • Add the water and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let the adobo simmer for about 45 minutes to an hour, or until the chicken is tender and fully cooked.


  • Once the chicken is cooked, remove the lid and increase the heat to high. Let the adobo cook for an additional 5-10 minutes, or until the sauce has thickened to your desired consistency.


  • Taste the adobo and add salt if necessary.


  • Serve hot with rice and enjoy!
