Ingredients:

- 1/2 cup cooked bacon, diced (optional)
- 1/4 cup pickled ginger, chopped (optional)
- 1/4 cup bonito flakes (optional)
- Okonomiyaki sauce (can be substituted with Worcestershire sauce)
- Mayonnaise
- Vegetable oil
Instructions:
1. In a large bowl, whisk together the flour, dashi broth, and egg until the batter is smooth.
2. Add the shredded cabbage, green onions, and any optional ingredients you choose to use, such as shrimp, bacon, pickled ginger, or bonito flakes. Mix well.
3. Heat a non-stick skillet over medium heat and add a small amount of vegetable oil.
4. Spoon the batter into the skillet and spread it out into a circular shape about 1/2 inch thick.
5. Cook the okonomiyaki for about 3-4 minutes on each side, or until both sides are golden brown and crispy.
6. Once the okonomiyaki is cooked, remove it from the skillet and place it on a plate.
7. Drizzle okonomiyaki sauce over the top of the pancake, then add a generous amount of mayonnaise on top of that.
