Ingredients

- 2 cups jasmine rice
- 1 can of coconut milk (400 ml)
- 2 cups water
- 2 lemongrass stalks, bruised
- 2 bay leaves
- 2 kaffir lime leaves
- 1 tsp salt
- 1/2 tsp ground turmeric
- 2 garlic cloves, minced
- 2 shallots, minced
- 2 chicken thighs, cut into small pieces
- Cooking oil
Instructions
Rinse the rice with cold water until the water runs clear. Drain the rice and set it aside.
Heat the cooking oil in a large pot over medium heat. Add the garlic and shallots and stir until fragrant.
Add the chicken pieces and stir until they are cooked through.
Add the lemongrass, bay leaves, kaffir lime leaves, ground turmeric, and salt to the pot. Stir to combine.
Add the rice to the pot and stir to coat the grains with the spice mixture.
Add the coconut milk and water to the pot and stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the liquid has been absorbed by the rice.
Remove the pot from the heat and let it sit for 5 minutes.
Fluff the rice with a fork and remove the lemongrass, bay leaves, and kaffir lime leaves.
Serve the Nasi Liwet with fried chicken, tofu, vegetables, and sambal (a spicy chili paste) on the side.
